Nectarines seem to be on special this week and I am planning to make some icecream. The recipe calls for 3 egg yolks, so I'm looking for a way to use up the whites.

If I tried out the meringue recipe I have, I will then end up with an extra yolk (because it uses 4 egg whites).

Any suggestions?
